A classic Malaysian dish – Pieces of beef are slowly cooked in coconut milk, tamarind, spices, garlic, chillies, and ka r lime, as well as other whole spices which include cinnamon and star anise. This allows the meat to tenderise and absorb all the complex flavours. We serve this with a fragrant turmeric rice.

Your shopping list:

700g good quality stewing beef (use beef skirt from your local butcher if possible)
1 medium red onion
3 cloves garlic
20g fresh root ginger
1 lime
1 400ml can coconut milk
dark soy sauce (you need 1 tbsp)
350g jasmine rice
1 chicken stock cube

From your store-cupboard:

½ tbsp brown sugar
2 tbsp vegetable or sunflower oil
1 tsp salt
